<p>At the end of last month we posted <a href="http://www.cookmanfood.com/lunch-recipes/cookmanfood-show-episode-5" target="_self">episode 5</a> of our cooking show.  We are doing our best to have the recipes posted before or after the shows that we post.  So, a little late but better late than never, the crispy tacos recipe. </p>
<p>I love fish tacos.  I grew up back east so I did not get introduced to good southwestern and Mexican style food until I moved to San Diego when I was 18.  Since that time, I have been making up for it.  I have had fish tacos done over a dozen different ways over the past decade and having them crispy in a corn tortilla has to be my favorite.  The key to this is picking out a good fish, for these we used tilapia.  Next you need a good beer batter.  In the video, Todd talked about using a pancake mix and using beer instead of water.  That is a great way to do it but a flour, seasoning, and beer mixture also works well.  Another thing I like to do is add a little hot sauce to the batter.  In this case we used <a href="http://www.missannashotsauce.com/" target="_blank">Miss Anna&#8217;s Hot Pepper Sauce</a> Cut the fish into 3/4 inch by 1 &#8211; 2 inch chunks and coat in the beer batter.  Next, get your fryer prepped and make sure the oil is good and hot before dropping the fish in.  Also make sure the basket is in the down position.  Otherwise your fish will stick to the basket.  Cook for 5 minutes or so until the batter is golden brown.</p>
<p>Next step is to make the pico de gallo.  This can be done first if you like and it can also be done the day before.  I like to keep it simple, some tomato, red or yellow onion, cilantro, and some fresh diced chili.  I also like to add a little lime juice to it to give it some zing.  Dice up the ingredients into small chunks and mix into a bowl.  Add a little fresh squeezed lime juice to give it some citrus flavor.  I also like to have this sit for a half an hour or so in the fridge.  I find the longer i let it sit, the better it gets.</p>
<p>Finally you want to cook up the tortillas a bit.  We used corn tortillas on a cast iron skillet lightly coated in oil.  We had them on there for about 30 seconds a side, just enough to get them warm and soft so that they won&#8217;t fall apart when we are eating them.</p>
<p>We added some <a href="http://www.missannashotsauce.com/" target="_blank">Miss Anna&#8217;s</a>garlic habanero sauce on the top of the tacos, as well as some fresh cabbage.  Cabbage bring some crispness to the dish and the Miss Anna&#8217;s brings the heat and that great flavor that belongs on most seafood dishes. </p>

<p>    As you may or may not have noticed, Miss Anna&#8217;s products are a hit with our company.  They have amazing flavors, varying levels of heat, and use quality ingredients.  This sauce company is growing steadily and becoming more and more well known.  It has a very strong following in south west Colorado and is starting to be found in local stores.  So, how is this sauce different from the others?  Well, some of the other reviews we have done such as the <a href="http://www.cookmanfood.com/new-products/miss-anna%e2%80%99s-%e2%80%93-sweet-and-sassy-sauce" target="_blank">Sweet and Sassy Sauce</a> and the <a href="http://www.cookmanfood.com/great-products/miss-annas-mellow-pepper-sauce" target="_blank">Mellow Pepper Sauce</a> bring a lot of flavor but not a whole lotta heat.  The Hot Pepper Sauce makes up for that and more.  The number one ingredient in this sauce is Habanero Peppers and you can tell they are in there.  The sauce is not all heat though as it starts out with none at all.  You see, different types of chilies bring heat to different parts of the mouth at different times.  The habanero is a late arrival when talking to heat as opposed to a serrano or a jalapeno which comes much earlier.  This sacue starts out with that Miss Anna&#8217;s trademark curry flavor mixed with some garlic, mustard, and onion.  Then, just when you think the sauce has not heat&#8230;It hits you.  Don&#8217;t get me wrong, this sauce was not made to burn out your mouth and nothing more, in fact, it is quite the opposite.  This sauce is designed just like the others, with lots of flavor and passion, however, this one has the heat that some of us chili heads just require.  For more information and ordering check out: <a href="http://www.missannashotsauce.com/">http://www.missannashotsauce.com/</a></p>

			<content:encoded><![CDATA[<p>I can&#8217;t quite predict when it is going to happen but every few months I get a wicked craving for hot dogs.  It could have been the shakraut that I ate last weekend or it could be all the talk of the upcoming baseball season but it has hit me hard the last few days.  I am very simple when I make them as well but sometimes simple is all you need to have an amazing hot dog</p>
<p>1 Tbsp of butter<br />
1/4 small onion minced<br />
2 Hot Dogs<br />
Spicy Mustard<br />
Miss Anna&#8217;s Hot Pepper Sauce</p>
<p>Get a small non-stick skillet going on high and add the butter.  Next add the hot dogs and brown on all sides.  I could have used the grill for these but for some reason hot dogs taste better fried in butter. While they are cooking throw 2 buns in the toaster oven and then chop the onion.  When the buns are done, line the inside with the minced onions, I put a ton in there.  Next put in the dogs and top with a bead of spicy mustard and a bead of Miss Anna&#8217;s sauce.  You got heat, you got onion and you got butter.  Crack open some Ska True Blonde Ale and enjoy.</p>
<p>I would have put up a picture but my camera is in need of a 270 WSM round going through it at 200 yds.  Time to upgrade.</p>
