Today was the classic “Monday” all day long I was just in a funk. When I got home I realized that we did not have anything planned for dinner and I was starving. Most of the meat in the house is frozen solid and I did not have the time or the patience at this point to deal with defrosting a rack or ribs or a pork loin. What I did have time for was a few chicken breasts and some chicken tenderloins. They defrost rather quickly in warm water and grill up fast as well. As I got them in the water I dug out some manchego cheese from my cheese drawer and started snacking. After about 15 minutes the chicken was defrosted, I put some fresh cracked pepper on them and coated them with some of the BBQ sauce we got from Big Acres Gourmet Foods. Put the chicken on the grill, cooked for about 15 minutes, added some smoked provolone cheese, toasted a few buns and dinner was served. Topped it off with some more Rich and Mild BBQ sauce banana peppers and a slice of tomato. It hit the spot and I have leftovers for tomorrow.
